Designed to hone core barista skills for people of all experience levels, starting from the basics and working up through a professional level. Students will receive a detailed understanding of their ingredients and of the techniques available to make their drinks amazing.

GREEN COFFEE

This course covers key concepts surrounding green coffee from growing the plant, through processing, shipping and storage to arrival at a roastery. This is ideal for those looking to gain an insight into the broad subject matter of green coffee.

SENSORY SKILLS

Students will learn to recognize the core concepts of sensory analysis and explain how coffee professionals use it in the coffee industry. The focus will be on identifying, describing, and discriminating objectively aroma, taste, and body in coffees.

This 3-level course is designed to refine roasting skills from understanding the terminology to learning the chemical reactions involved in the roasting process. Students will undergo a sensory evaluation of different roasting profiles in the 4-day professional level.

FSVP CERTIFICATION

Foreign Supplier Verification Program (FSVP) certification course for exporters, growers, importers, and those roasters doing direct trade. This is an 8-module course, taught over 8 weeks. We will not only review the law and what you need to have in place, but the module will be spent reviewing templates and creating a mock FSVP plan together.

The SCA Flavor wheel is a tool designed to unify the language around coffee flavor. This class describes the development and science behind the wheel. Participants will learn how the World Coffee Research Sensory Lexicon was formed and how to use the lexicon alongside the wheel.

The SCA cupping protocol is an industry-standard for coffee evaluation. Learn how & why it was developed, understand the difference between smell and taste, use terminology to describe different attributes of coffee and finish with a full SCA cupping with coffee from 4 different regions of the world
